Ginger Kombucha & Gin Refresher

Ginger Kombucha & Gin Refresher

A vibrant and effervescent cocktail that combines the tangy complexity of ginger kombucha with the botanical notes of gin, balanced by fresh lime and a hint of honey. The ginger kombucha provides a naturally spicy, slightly sour base that complements the gin’s juniper, while the lime adds brightness and the honey rounds off the sharp edges. Served over ice, this refresher is crisp, invigorating, and perfect for warm-weather sipping.

Ingredients

Scale
  • 2 cups (16 oz) chilled ginger kombucha
  • 1/2 cup (4 oz) London dry gin (such as Beefeater or Tanqueray)
  • 1/4 cup (2 oz) freshly squeezed lime juice (from about 2 limes)
  • 2 tablespoons honey
  • 2 cups ice cubes
  • 4 lime wheels (1/4-inch thick), for garnish
  • 4 thin slices fresh ginger (optional), for garnish

Instructions

  1. In a small microwave-safe bowl or in a saucepan over low heat, warm the honey with 1 tablespoon of the lime juice until it liquefies and blends easily, about 15-20 seconds in the microwave. This thins the honey so it incorporates seamlessly into the cocktail rather than clumping in the cold liquid. Set aside to cool for 1 minute.
  2. Fill a 1-quart pitcher or a large cocktail shaker with the 2 cups of ice cubes. Pour in the chilled ginger kombucha, London dry gin, the remaining lime juice (after the 1 tablespoon used for the honey), and the honey-lime mixture. Stir vigorously for about 20 seconds to chill and combine all ingredients. The kombucha’s carbonation will create a lively effervescence; avoid shaking too hard in a closed shaker to prevent excessive fizz.
  3. Divide the mixture evenly among 4 highball or lowball glasses, pouring over fresh ice if desired (some ice from the pitcher will have melted slightly—add a few new cubes to each glass for a crisp presentation). The drink should be deep amber-gold with a persistent fizzy head.
  4. Garnish each glass with a lime wheel and a thin slice of fresh ginger, if using. The ginger slice reinforces the spicy aroma, while the lime wheel adds a citrusy garnish that winks at the cocktail’s bright flavor profile. Serve immediately, as the effervescence will fade if allowed to sit.

Notes

For optimal flavor, use a high-quality, unsweetened or low-sugar ginger kombucha to keep the drink from becoming overly sweet. The honey can be omitted if your kombucha is already sweetened. To make a non-alcoholic version, replace the gin with a splash of chilled tonic water or a non-alcoholic botanical spirit like Seedlip Garden 108, adjusting sweetness to taste. This refresher is best served immediately and does not store well; leftovers can be refrigerated for up to 1 day but will lose carbonation and the herbs may become slightly muted. Stir well before serving if chilled overnight and add a few fresh ice cubes. Do not freeze.
